Easy Steak Tartare
|Sirloin steak||1⁄2 Pound, well trimmed|
|Egg yolk||1 , beaten|
|Hot mustard||1⁄2 Teaspoon|
|Coarse salt||To Taste|
|Freshly ground pepper||To Taste|
|Worcestershire sauce||1 Dash|
|Hot pepper sauce||1 Dash|
|Sour cream||1 Cup (16 tbs)|
|Finely chopped sweet onion||1⁄2 Cup (8 tbs)|
|Rye bread slice||4|
Grind meat twice and mix with yolk.
Blend mustard to a paste with water; add seasonings.
Mix with meat; taste and adjust seasonings as desired.
Shape meat into mound on chilled plate.
Cover with a layer of sour cream and top with caviar.
Place chopped onion and rye bread on side of chilled plate and serve.
