Swedish Toasted Almond Cake
|Butter||3 Tablespoon, melted|
|Graham cracker crumbs||1⁄4 Cup (4 tbs)|
|Milk||3⁄4 Cup (12 tbs), scalded|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||2 Teaspoon|
|Sugar||1 1⁄2 Cup (24 tbs)|
Preheat electric skillet at 425°.
Combine 1 tablespoon butter and crumbs; coat bottom and sides of 9x9x2-inch baking pan.
Pour remaining melted butter into milk.
Sift together flour, baking powder, and salt.
Beat eggs till thick and foamy.
Gradually add sugar; continue beating till thick and lemon-colored.
Fold in flour mixture; stir in milk mixture.
Pour into baking pan.
Place on low rack in skillet.
Bake, covered, for 65 to 70 minutes.
Gently spread Topping around the outer edges of cake; bake, covered, 10 minutes.
Serve warm or cold.
