|Chopped cooked ham||1⁄2 Cup (8 tbs)|
|Onion||1 , diced|
|Olive oil||1 Tablespoon|
|Melted butter||1 Tablespoon|
|Egg yolks||2 , beaten|
|Bread crumbs||1⁄2 Cup (8 tbs)|
|Fresh lemon juice||1 Tablespoon|
|Mashed potatoes||1 Cup (16 tbs)|
Skin sole and remove backbone.
Fill space with bacon.
Put diced onion and fish in a flat casserole which has been spread with olive oil.
Pour melted butter over fish.
Season with salt and pepper.
Cover fish with beaten egg yolks, then sprinkle with bread crumbs.
Add wine and lemon juice.
Bake in preheated moderate oven (375°F.) for about 30 minutes.
Border with mashed potatoes or potato chips.
Bake for about 5 minutes longer.
Garnish with parsley.
