|Pork sausage||1 Pound|
|Chopped onions||1 Cup (16 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Green pepper||To Taste, sealed and cut into 1/2-inch strips|
|Tomatoes||12 Ounce (1 Can / 1 Pound)|
|Freshly ground black pepper||To Taste|
|Cold water||1⁄4 Cup (4 tbs)|
Broil or saute sausage until thoroughly cooked.
Discard fat and cut sausage into slices 1/2 inch thick.
Saute onions and garlic in oil until tender.
Add green pepper, tomatoes, seasonings and sausage.
Cover and simmer over low heat for 20 to 30 minutes.
If sauce needs to be thickened, dissolve cornstarch in cold water and stir gradually into boiling sauce, continuing to cook it, stirring briefly, until thick.
