|Onion||2 Tablespoon, chopped|
|Butter/Vegetable oil||1⁄2 Tablespoon|
|Diced cooked potato||2 Tablespoon|
|Green bell pepper||2 Tablespoon, chopped|
|Mushrooms||2 Tablespoon, chopped|
Saute onion in butter or vegetable oil until softened. Add potato, bell pepper, mushrooms and sausage. Saute briefly. Season lightly with salt and pepper.
Prepare omelet according to Basic Omelet instructions, using sauteed vegetables for the filling. After folding omelet over filling, sprinkle shredded cheese over top, if desired, before broiling.
