Spice of Life Kabobs
|Apricot preserves||1⁄2 Cup (8 tbs)|
|Dry white wine||2 Tablespoon|
|Ground allspice||1⁄4 Teaspoon|
|Boneless skinless chicken breasts||2 , cut into 2 x1/2-inch strips (2 Whole)|
|Zucchini||2 Small, cut into 0.5 inch slices|
|Sweet pepper||1 Large, cut into 1-inch pieces (Red /Green)|
For glaze, in a small saucepan stir together apricot preserves, white wine, and allspice.
Cook, stirring occasionally, till heated through.
Meanwhile, preheat the broiler.
Thread chicken onto 8 skewers alternately with zucchini and pepper.
Brush with glaze mixture.
Place skewers on an unheated rack in a broiler pan.
Broil 4 inches from the heat for 3 to 4 minutes or till lightly browned.
Turn and brush with glaze mixture.
Broil for 3 to 4 minutes more or till chicken is no longer pink and vegetables are of desired doneness.
Put a cherry tomato on the end of each skewer and broil for 1 minute more.
