Swedish Pancakes

Ingredients
  Eggs 2
  Milk 1 Cup (16 tbs)
  All purpose flour 1⁄2 Cup (8 tbs)
  Sugar 2 Teaspoon
  Salt 1⁄2 Teaspoon
Directions

Combine all ingredients; beat with rotary beater till smooth.
Bake in moderately hot, lightly greased electric skillet (375°), using 2 tablespoons batter for each pancake.
Spread batter quickly and evenly to make thin cakes, 6 inches in diameter.
When underside is light brown (about 1 1/2 minutes), remove from skillet.
Fill with Mushroom Sauce or Shrimp in Hollandaise Sauce, and bake.
