Hot Polish Potato Salad
|Peeled cubed potatoes||2 Cup (32 tbs) (2 Potatoes)|
|Water||1⁄4 Cup (4 tbs)|
|Bacon slices||2 , halved|
|Chopped onion||1⁄4 Cup (4 tbs)|
|All purpose flour||1 Tablespoon|
|Celery seed||1⁄4 Teaspoon|
|Cooked polish sausages||2 , cut into 1-inch pieces|
|Snipped parsley||2 Tablespoon|
In a 1-quart casserole combine cubed potatoes and 1/4 cup water.
Cook at HIGH for 7 minutes.
Drain in colander and set aside.
In same casserole cook bacon, covered, at HIGH for 2 minutes.
Remove bacon with slotted soon, reserving drippings in casserole.
Crumble bacon and set aside.
Add chopped onion to the reserved drippings.
Cook, covered, at HIGH for 1 1/2 minutes.
Stir in sugar, flour, salt, celery seed, and pepper.
Add 1/4 cup water and vinegar; cook, uncovered, at HIGH for 1 1/2 minutes or till mixture is thickened and bubbly, stirring once.
Stir in potatoes and sausage.
Cook, covered, at HIGH for 3 1/2 minutes or till heated through, stirring once.
Add more cooking time, if necessary.
Sprinkle with parsley and bacon.
