|Round beef||1 Pound (3/4 Inch Thick)|
|Salad oil/Fat||3 Tablespoon|
|Thinly sliced onions||3⁄4 Cup (12 tbs)|
|Cold water||40 Tablespoon|
|Brown sugar||1 Tablespoon|
|Bay leaves||3 Small|
|Mashed potatoes a la phyfe||1 Cup (16 tbs)|
Cut the beef into 1/4" cubes; brown in the hot fat or salad oil with speck pepper.
Add onions, and stir until lightly browned.
Add the salt, 2 1/2 c cold water, sugar and bay leaves.
Cover; simmer 1 1/4 hrs., or until tender.
Remove bay leaves; then stir in flour and 5 tablesp water, blended together.
Cook until smooth and thickened.
Serve with or over Mashed Potatoes a la Phyfe.
