Brandied Pawpaw Whip

Ingredients
  Pawpaw 1 (Firm Type)
  Lemon juice 1⁄2 Cup (8 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Gelatin 1 Tablespoon
  Water 2 Tablespoon
  Brandy 1 Tablespoon
  Whipped cream 2 Cup (32 tbs)
Directions

Peel and remove the seeds from pawpaw.
Mash sufficient to yield 1 1/2 cups.
Add lemon juice and sugar.
Place in a saucepan and boil for 5 minutes.
(This is necessary to remove substance which destroys gelatine).
Combine gelatine with water and stir into hot fruit.
Reduce fruit to a puree in a blender or by sieving.
Add brandy and cool.
When partially set, fold in whipped cream.
Serve plain or with ice-cream and topped with toasted coconut.
