Danish Blue Cheese Mousse
|Lemon jelly||1 Ounce (1 Packet)|
|Danish blue cheese||4 Ounce|
|Mayonnaise||2 Ounce (2 Heaped Tablespoons)|
|Red pepper||1 Small, diced|
|Celery stalks||2 , diced|
|Eating apples||2 , diced|
|Evaporated milk/Single milk||1⁄4 Pint|
|Lemon juice||1 Tablespoon|
|Worcestershire sauce||1 Tablespoon|
Make up the jelly with half a pint of water and leave until nearly setting.
Crumble the cheese and mash with a fork, add the mayonnaise, diced pepper, celery and apple.
Whip the evaporated milk or cream with 1 tablespoon lemon juice and fold into the cheese mixture, then fold in the jelly and Worcestershire sauce.
Mix well and pour into a mould and leave to set.
When firm, turn out and serve.
