Braised Fresh Cucumbers
|Cucumbers||4 , pared and thinly sliced to make 6 cup|
|Bacon slices||3 , diced|
|Non caloric liquid sweetener||1⁄4 Teaspoon|
|Cider vinegar||1 Tablespoon|
1. In small bowl, layer cucumbers, sprinkling with salt. Refrigerate, covered, 30 minutes.
2. Meanwhile, in large skillet, saute bacon until crisp; drain well.
3. Add cucumbers, drained thoroughly, and remaining ingredients; stir to mix well.
4. Cook, covered and over low heat, 10 to 12 minutes.
