Hot Tartar Sauce

Ingredients
  Butter 25 Gram
  Plain flour 25 Gram
  Milk 275 Milliliter
  Whole egg powder 15 Milliliter (Dried Egg Powder)
  Lemon juice 30 Milliliter
  Chopped parsley 15 Milliliter
  Chopped gherkins 15 Milliliter
  Chopped capers 15 Milliliter
  Salt To Taste
  Pepper To Taste
Directions

1. Melt the butter in a small saucepan, add the flour and cook for 2 minutes. Blend in the milk, bring to the boil and cook for 3 minutes. Season with salt and pepper.
2. Blend the dried egg and lemon juice to a smooth paste, then stir it into the sauce with the remaining ingredients. Reheat, but do not boil. Serve hot with fried or grilled fish.
