|Scraped salsify||2 Cup (32 tbs), sliced|
|Sliced celery||1 Cup (16 tbs) (Use Raw Celery)|
|Boiling water||1 Cup (16 tbs)|
|Flour||1 1⁄2 Tablespoon|
|Rich milk/Evaporated milk||1⁄2 Cup (8 tbs)|
1. Drop the salsify and celery into the boiling water with the vinegar and salt. Simmer 45 minutes, covered.
2. Blend the flour into the melted butter or margarine, add the milk and the liquid drained from the vegetables. Stir and simmer 5 minutes.
3. Mix with vegetables, add pepper. Heat and serve.
