Creamed Salsify

Ingredients
  Scraped salsify 2 Cup (32 tbs), sliced
  Sliced celery 1 Cup (16 tbs) (Use Raw Celery)
  Boiling water 1 Cup (16 tbs)
  Vinegar 1 Tablespoon
  Salt 3⁄4 Teaspoon
  Flour 1 1⁄2 Tablespoon
  Butter/Margarine 2 Tablespoon
  Rich milk/Evaporated milk 1⁄2 Cup (8 tbs)
  Pepper 1⁄8 Teaspoon
Directions

1. Drop the salsify and celery into the boiling water with the vinegar and salt. Simmer 45 minutes, covered.
2. Blend the flour into the melted butter or margarine, add the milk and the liquid drained from the vegetables. Stir and simmer 5 minutes.
3. Mix with vegetables, add pepper. Heat and serve.
