Fresh Stir Fry Melange

Ingredients
  Olive oil 2 Tablespoon
  Green bell peppers 3 1⁄2 Cup (56 tbs), cut into strips
  Red bell peppers 3 1⁄2 Cup (56 tbs), cut into strips
  Mushrooms 2 1⁄2 Cup (40 tbs), sliced
  Celery 1 Cup (16 tbs), sliced
  Onion 2 Tablespoon, chopped
  Salt 3⁄4 Teaspoon
  Garlic 1⁄2 Clove (2.5 gm), crushed
  Granulated sugar 1⁄2 Teaspoon
  Fresh oregano/1/4 teaspoon dried oregano 1⁄2 Teaspoon
  Pepper 1 Dash
  Tomatoes 2 , cut into wedges
  Wine vinegar 1 Teaspoon
Directions

In a skillet or wok heat olive oil over medium-high heat.
Add green and red pepper strips, mushrooms, celery, onion, salt, garlic, sugar, oregano and pepper.
Stir-fry until peppers are tender-crisp.
Add tomatoes and vinegar.
Stir-fry until heated through.
