Stuffed Edam

Ingredients
  Edam cheese/Gouda cheese 7 Ounce
  Onion juice 1 Tablespoon
  Prepared mustard 1 Tablespoon
  Light cream/Milk 1 Tablespoon
Directions

Have cheese at room temperature.
Press cooky or biscuit cutter into top of cheese, cutting deep circle.
Remove circle of cheese, then scoop out center leaving 1/4-inch wall.
Notch edge of cheese shell with sharp knife.
Whip the cheese with electric mixer or mash with fork; add onion juice and prepared mustard to taste.
Beat in enough light cream to make of spreading consistency.
Mound cheese in shell.
Chill several hours to blend flavors.
Remove from refrigerator 1 hour before serving.
Poke a spreader or two in top; arrange on tray with crackers, fresh fruit.
