Wholemeal And Buttermilk Irish Soda Bread
|Plain wholemeal flour||8 Ounce (250 Gram)|
|Plain white flour||7 Ounce (200 Gram, 7 Ounce, Plus Extra For Dusting)|
|Soda bicarbonate||1⁄2 Teaspoon|
|Cream of tartar||1⁄2 Teaspoon|
|Butter||1 Ounce (25 Gram)|
|Skimmed milk||1⁄2 Pint (300 Milliliter)|
Sift together the two flours, bicarbonate of soda and cream of tartar, then rub in the butter until the mixture resembles fine breadcrumbs.
Quickly stir in the buttermilk or milk and mix until a soft dough is formed.
Turn the dough on to a lightly floured work surface and knead until smooth.
Shape the dough into a round and place it on a lightly floured baking sheet.
Cut a cross in the top with a sharp knife, sprinkle with a little flour, then bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 25-30 minutes.
