Dried Fruit Crumble
|Dried apricots||1 Cup (16 tbs)|
|Dried figs||1 Cup (16 tbs)|
|Prunes||1 Cup (16 tbs), pitted|
|Raisins||1⁄4 Cup (4 tbs)|
|Currants||1⁄4 Cup (4 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Water||1 Cup (16 tbs)|
|Almonds||1⁄4 Cup (4 tbs)|
|Coconut||1⁄4 Cup (4 tbs), desiccated|
|Brown sugar||1⁄4 Cup (4 tbs)|
Soak the fruit tor 1 hour in enough water to cover, then drain.
Place the sugar and water in a saucepan and bring to the boil.
Add the fruit and simmer for 30 minutes or until the liquid has been absorbed.
Add the almonds and place the mixture in an ovenproof serving dish.
Preheat oven to 400°F.
Combine the flour, coconut, sugar and butter and sprinkle over the fruit.
Bake for 15-20 minutes or until the top is golden.
