Latvian Farmer's Breakfast
|Boneless pork loin||5 Ounce, cubed|
|Pork sausages||5 Ounce, sliced|
|Boneless lean beef sirloin/Tenderloin||7 Ounce, cubed|
|Bacon||5 Ounce, chopped|
|Onions||2 Medium, chopped|
|Milk/Sour cream||1⁄2 Cup (8 tbs)|
|Chopped mixed herbs||1 Tablespoon|
Fry all of the meats and the chopped onions together until browned, about 15 minutes.
Boil the potatoes in their jackets for 15 to 20 minutes, then peel and slice them and fry them in the lard until lightly browned.
Add the potato slices to the meat.
Put the mixture into a deep ovenproof dish.
Beat the eggs and milk or sour cream together, and pour this mixture over the meat.
Bake in a preheated 350° F. [180° C] oven for 20 minutes or until the egg mixture is set.
Season with salt and pepper and sprinkle with mixed herbs before serving.
Garnish with sliced sour gherkins and tomatoes, and surround with raw chopped onion if desired.
