Western Omelet

Ingredients
  Eggs 2 Medium, separated
  Ham 3 Ounce, diced
  Diced onion 1 Ounce
  Diced green pepper 2 Tablespoon
  Diced celery 2 Tablespoon
  Skim milk 2 Tablespoon
  Sugar free tomato sauce 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste
Directions

In bowl beat egg whites until stiff but not dry.
Set aside.
In separate bowl beat egg yolks until frothy.
Season with salt and pepper.
Add ham, onion, green pepper, celery, and skim milk to egg yolks.
Fold in whites.
Pour into a nonstick skillet with a flameproof handle.
Cook until bottom is brown; then place skillet under broiler, as close to heat source as possible.
Cook until omelet is browned and puffy.
Serve with tomato sauce if desired.
Divide evenly.
