Ingredients
  Egg yolk 6
  Sugar 1⁄4 Cup (4 tbs)
  Butter/Margarine 1 Tablespoon, melted
  Heavy cream 1⁄2 Cup (8 tbs), whipped
  Cardamom 1 Teaspoon, ground
  Enriched flour 2 Cup (32 tbs), sifted
  Salt 1⁄2 Teaspoon
Directions

Beat egg yolks till thick and lemon-colored; gradually beat in sugar.
Gently stir in butter.
Fold in whipped cream and cardamom.
Sift together flour and salt; gradually fold into yolk mixture just enough to make soft dough.
Chill well.
Divide dough in half.
On lightly floured surface, roll each piece to 1/8 inch.
Cut in 3x3/4-inch strips.
Cut a slit lengthwise in center of each and pull one end through.
Fry a few at a time in deep, hot oil or fat (375°) about 1 to 1 1/2 minutes, or till a very light golden brown.
Drain on paper towels.
While warm, sift a little confectioners' sugar over.
