Beef Roulades

Ingredients
  Sifted flour 1 Cup (16 tbs)
  Sugar 1 Tablespoon
  Salt 1 Dash
  Eggs 3 , beaten
  Milk 1 Cup (16 tbs)
  Butter 4 Tablespoon, melted
For filling
  Dry sherry 1⁄2 Cup (8 tbs)
  Parmesan cheese 1⁄2 Cup (8 tbs), grated
  Thin mozzarella cheese slices 16
  Paprika 1 Teaspoon
Directions

Sift dry ingredients together.
Stir in eggs and milk.
Add 2 tablespoons butter; mix well.
Set aside for 2 hours.
Pour thin layer of batter into hot greased skillet.
Brown; turn pancake.
Cook on each side for 1 minute.
Repeat procedure until all batter is used.
Spread Filling on pancakes; roll up.
Place in greased baking dish.
Sprinkle with sherry and Parmesan cheese.
Place 2 mozzarella cheese slices on each roll; sprinkle with paprika and remaining butter.
Bake at 400 degrees for 5 minutes or until cheese is melted.
