Ukrainian Cabbage Rolls
|Ground beef||1 Pound|
|Rice||1⁄4 Cup (4 tbs), uncooked|
|Onion||1 , grated|
|Carrot||1 , grated|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Tomato sauce||1 Cup (16 tbs)|
|Raisins||1 Cup (16 tbs)|
In a large bowl, combine meat, rice, and egg.
Stir in onion, carrot, and salt.
In a saucepan, cover cabbage leaves with boiling water.
Boil for 2 to 3 minutes; drain.
Place a ball of the meat-and-rice mixture in the centre of each cabbage leaf and roll up the leaf.
Tuck in the ends securely.
In a heavy frying pan with a tight-fitting lid, set rolls close together.
Add lemon juice, brown sugar, tomato sauce, and raisins.
Pour in enough water to cover the cabbage rolls.
Cover tightly and cook over moderate heat for 30 minutes.
Reduce heat and simmer for 20 minutes more.
Place frying pan in a 350°F oven and bake, uncovered, for 20 minutes, or until rolls are brown.
Turn cabbage rolls once to brown evenly.
Add hot water while baking if liquid evaporates.
