Danish Macaroni Salad
|Cucumber||1 Medium, peeled, halved, seeded, and cut into 1/2-inch pieces|
|Maruzzine||4 Ounce, cooked al dente, well drained, and cooled (Small Pasta Shells)|
|Pickled herring filets||3 , cut into 1/2-inch slices|
|Scallions||4 , coarsely chopped (White Part Only)|
|Mushrooms||4 Small, thinly sliced|
|Wine vinegar||2 Tablespoon|
|Olive oil||2 Tablespoon|
|Curry powder||2 Teaspoon|
|Sour cream||1 Cup (16 tbs)|
In a salad bowl, place the cucumber, pasta shells, herring, scallions and mushrooms.
Pour in the vinegar-oil-salt blend and mix well but gently.
Refrigerate for 2 hours.
Just before serving, blend the curry and sour cream, pour over the salad and mix well.
