|Coarsely chopped cabbage||2 Cup (32 tbs)|
|Canned vegetable beef soup||10 3⁄4 Ounce (Home Cookin' Old Fashioned, 1 Can)|
|Condensed beef broth||10 1⁄2 Ounce (Bouillon, 1 Can)|
|Water||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Sour cream||1⁄2 Cup (8 tbs) (For Garnish)|
|Chopped chives/Green onions||2 Tablespoon (For Garnish)|
1. In 3-quart microwave-safe casserole, combine butter and onion. Cover with lid; microwave on high 3 minutes or until tender, stirring once during cooking.
2. Stir in beets, cabbage, soup, broth, water, lemon juice, sugar and pepper. Cover; microwave on high 12 minutes or until boiling, stirring once during cooking. Let stand, covered, 5 minutes.
3. Meanwhile, in small bowl, stir together sour cream and chives. Ladle soup into bowls and garnish with sour cream mixture.
