Hearty Borscht

Ingredients
  Butter/Margarine 2 Tablespoon
  Chopped onion 1⁄2 Cup (8 tbs)
  Canned whole beets 16 Ounce, drained and coarsely chopped (1 Can)
  Coarsely chopped cabbage 2 Cup (32 tbs)
  Canned vegetable beef soup 10 3⁄4 Ounce (Home Cookin' Old Fashioned, 1 Can)
  Condensed beef broth 10 1⁄2 Ounce (Bouillon, 1 Can)
  Water 1 Cup (16 tbs)
  Lemon juice 1 Tablespoon
  Sugar 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Sour cream 1⁄2 Cup (8 tbs) (For Garnish)
  Chopped chives/Green onions 2 Tablespoon (For Garnish)
Directions

1. In 3-quart microwave-safe casserole, combine butter and onion. Cover with lid; microwave on high 3 minutes or until tender, stirring once during cooking.
2. Stir in beets, cabbage, soup, broth, water, lemon juice, sugar and pepper. Cover; microwave on high 12 minutes or until boiling, stirring once during cooking. Let stand, covered, 5 minutes.
3. Meanwhile, in small bowl, stir together sour cream and chives. Ladle soup into bowls and garnish with sour cream mixture.
