Irish Oyster Soup
|Potato||1 Large (Unpeeled)|
|Salt pork||1⁄8 Pound, diced|
|Milk||2 Cup (32 tbs)|
|Bouquet garni||1 (A Bay Leaf And Green Herbs Tied Together)|
|Shucked oysters||18 (Juice Reserved)|
|Parsley||1 Teaspoon (For Garnishing)|
Stage1-Cook the potatoes in boiling salted water until just tender.
Stage2-Meanwhile, bring the milk to a boil, remove from heat, dunk in the bouquet garni, and let infuse.
Stage3-Sauté the diced salt pork in a little butter over low heat until it is just cooked through.
Stage4-When the potatoes are done, peel and mash, then whip in the hot herbed milk.
Stage5-When the salt pork is tender, add the pieces, drained of their grease.
Stage6-Season to taste. Bring to a boil, stirring constantly, then add the oysters with their liquid.
stage7-Simmer for a few minutes.
Stage8-Taste for seasoning and stir in remaining butter.
Stage9-Serve at once, garnished with chopped parsley.
