Classic Irish Soda Bread

Back in Jersey, every St. Patty's Day we would somehow end up with loaves and loaves of Irish Soda Bread in our kitchen. It seemed everyone on the block would be comparing and contrasting different recipes in order to come up with the perfect combination, and of course, what better way to test your recipes than on your neighbors! So, after years of trial and error, I have settled on a what has come to be my favorite recipe for Irish Soda Bread...It comes from a family I grew up with, and I simply added in some of my healthier substitutions. This recipe has the perfect hint of sweetness, with a dry texture embodied with plump, golden, raisins and crunchy caraway seeds, just the way I like it! Try toasting it up with a light spread of butter...yum!!
Ingredients
White flour 3⁄4 Cup (12 tbs), sifted
Whole wheat flour 3⁄4 Cup (12 tbs), sifted
  Baking powder 1 1⁄2 Teaspoon
  Sugar 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon
Golden raisins 1⁄2 Cup (8 tbs)
  Caraway seeds 1⁄2 Tablespoon
Low fat buttermilk 3⁄4 Cup (12 tbs)
  Melted butter 2 Tablespoon
Flour 1⁄2 Cup (8 tbs) (For Dusting)
Directions

Preheat oven to 350.

1. Combine flour, sugar, baking powder, salt, and baking soda in a large bowl. Stir in raisins and caraway seeds.

2. Stir in buttermilk and butter until the dough is evenly moist. The dough will be sticky and wet.

3. On a cookie sheet that is sprayed with a little non stick spray, plop your dough right in the center shape into a disk.

4. Bake for 35 minutes. Cool and dust with a little flour!
