Chicken And Avocado Salad With Russian Dressing

Ingredients
  Chicken 4 Pound, roasted and cooled (2 Kilogram)
  Avocados/Black olives 2 , halved and stoned
For dressing
  Mayonnaise 10 Fluid Ounce (300 Milliliter)
  Cayenne pepper 1 Pinch
  Chili sauce 1 Teaspoon
  Egg 1 , hard boiled and finely chopped
  Spring onion 1 , finely chopped
  Parsley 1 Teaspoon, freshly chopped
  Salt To Taste
  Black pepper To Taste
Directions

First make the dressing.
Mix all the ingredients together well and adjust the seasoning if necessary.
Chill for 15 minutes.
Skin the chicken and remove the me from the bones.
Cut the meat into bite size pieces and place in a serving dish.
Halve the avocados and remove the stone then peel and dice the flesh.
Add to the chicken with the olives.
Pour the dressing over the salad ingredients and toss well to coat.
Serve immediately.
