Swiss Coated Chicken
|Chicken breast||1 Pound, split, boned and skinned (1 Large Size)|
|White pepper||1⁄4 Teaspoon|
|Apple juice||2 Tablespoon|
|Light cream||1⁄3 Cup (5.33 tbs)|
|Grated swiss cheese||1⁄2 Cup (8 tbs)|
|Chopped fresh parsley||1 Tablespoon|
Place chicken in shallow microproof baking dish.
Combine paprika, pepper, and cornstarch, stir in apple juice and cream, and pour over chicken.
Cook, covered, on HI (max. power) 1 minute.
Stir sauce and turn chicken.
Cook, covered, on HI (max. power) 2 minutes; stir.
Sprinkle cheese over chicken.
Cook, uncovered, on HI (max. power) 1 1/2 minutes, or until cheese melts and chicken is fork-tender.
Sprinkle with parsley before serving.
