Lemon Coconut Meringue Pudding
|Egg yolks||2 , beaten|
|Water||1⁄2 Cup (8 tbs)|
|Grated orange rind/Grated lemon rind||2 Teaspoon|
|Orange juice/Lemon juice||1⁄4 Cup (4 tbs)|
|Melted butter/Melted margarine||1⁄4 Cup (4 tbs)|
|Sugar||1 Cup (16 tbs)|
|Soft bread crumbs||2 Cup (32 tbs)|
|Coconut||1⁄2 Cup (8 tbs)|
Mix first seven ingredients and pour into a greased 9 X 6-inch bake dish.
Set in a pan of water and oven-poach at 350F for 35 minutes.
Beat egg whites and jelly together until stiff then stir in the coconut, spread over the pudding and return to oven for 14 minutes.
