Irish Liver

Ingredients
  Beef liver slices 4
  Margarine/Dripping 3 Tablespoon
  Chopped onion 2 Tablespoon
  Poultry seasoning 1 1⁄2 Teaspoon
  Soft bread crumbs 2 Cup (32 tbs) (preferably oatmeal bread)
  Egg 1 , beaten
  Milk/Broth 2 Tablespoon (adjust quantity as needed)
  Salt To Taste
  Pepper To Taste
  Side bacon slices 4 , cut in half
  Beef broth/Dry wine 1⁄2 Cup (8 tbs)
Directions

Wipe liver and dry on absorbent paper.
Saute slowly on both sides in hot margarine, then remove.
Add onion to the pan and stir-fry for 2 minutes.
Remove pan from heat and stir in poultry seasoning, soft crumbs, egg and enough milk to moisten.
Mix lightly and season with salt and pepper.
Arrange liver slices close together in a shallow greased bake dish.
Spread each slice with dressing, top with halved bacon slices.
Pour broth around liver.
Cover pan closely and bake at 350F for 40 minutes, then uncover and broil 5 to 8 minutes until bacon is crisp.
