Scandinavian Style Liver Loaf

Ingredients
  Margarine/Butter 2 Tablespoon
  All purpose flour 2 Tablespoon
  10% cream 1 Cup (16 tbs)
  Salt 1 Teaspoon
  Quatre epices 1 1⁄2 Teaspoon (adjust quantity as per taste)
  Beef liver 1 Pound
  Onion 1 , cut into pieces
  Garlic 2 Clove (10 gm)
  Parsley sprigs 3
  Eggs 2
  Sausage meat 1⁄2 Pound
  Side bacon 1⁄2 Pound, sliced
Directions

Melt margarine and stir in flour.
Add cream, salt, spices and cook until smoothly thickened.
Skin liver and remove membrane.
Whiz in a blender with onions, garlic, parsley and eggs using the sauce as a lubricant if necessary.
Beat in sausage meat.
Line a 6-cup loaf pan or mold with half slices bacon and scrape in the liver mixture.
Cover with any remaining bacon and bake in a deep pan of hot water at 350F for 1 1/2 hours.
Cool to room temperature then chill.
