Scandinavian Style Liver Loaf
|All purpose flour||2 Tablespoon|
|10% cream||1 Cup (16 tbs)|
|Quatre epices||1 1⁄2 Teaspoon (adjust quantity as per taste)|
|Beef liver||1 Pound|
|Onion||1 , cut into pieces|
|Garlic||2 Clove (10 gm)|
|Sausage meat||1⁄2 Pound|
|Side bacon||1⁄2 Pound, sliced|
Melt margarine and stir in flour.
Add cream, salt, spices and cook until smoothly thickened.
Skin liver and remove membrane.
Whiz in a blender with onions, garlic, parsley and eggs using the sauce as a lubricant if necessary.
Beat in sausage meat.
Line a 6-cup loaf pan or mold with half slices bacon and scrape in the liver mixture.
Cover with any remaining bacon and bake in a deep pan of hot water at 350F for 1 1/2 hours.
Cool to room temperature then chill.
