Pudim De Ovos A Moda De Coimbra

Ingredients
  Sugar 1 Cup (16 tbs)
  Water 1⁄3 Cup (5.33 tbs)
  Egg yolks 8
  Butter/1/2 cup port 1 Tablespoon, softened
Directions

Bring sugar and water to a boil.
Simmer until the mixture sticks to a spoon and syrup spins a thread (230° to 234°F.on candy thermometer).
In the meantime, blend egg yolks with butter.
When sugar mixture has cooled, add egg-yolk mixture slowly, beating all the time.
Pour into buttered 9-inch pan and bake in preheated slow oven (325°F.) for 35 minutes, or until set.
For added zest, the egg yolks can be beaten with 1/2 cup port instead of butter before adding to the syrup.
