Dutch Cheese And Shrimp Puffs

Ingredients
  Butter 1⁄2 Cup (8 tbs)
  Water 1 Cup (16 tbs)
  All purpose flour 1 3⁄4 Cup (28 tbs)
  Eggs 6
  Shredded gouda cheese/Edam cheese 2 Cup (32 tbs)
  Tiny shrimp 1⁄2 Cup (8 tbs)
  Chopped onion 1 Tablespoon
  Salt To Taste
  Pepper To Taste
  Tabasco 1 Dash
  Oil 2 Cup (32 tbs) (for deep frying)
Directions

In a saucepan, bring butter and water to a boil.
Add flour and stir vigorously with a wooden spoon until batter leaves the sides of the saucepan.
Remove from heat and allow batter to cool to room temperature.
Add eggs one at a time, beating well after each addition.
Stir in cheese, shrimp, onion, salt, pepper, and Tabasco.
In a deep frying pan, pour 2 inches of cooking oil.
Heat oil to 375°F.
Drop batter into hot oil by the spoonful.
Fry puffs until they are golden.
Remove with a slotted spoon and drain on paper towels.
Serve warm in a napkin-lined dish.
Puffs can be kept hot in a warm oven.
