Spanish Pollo Con Arroz
|Whole chicken||1 Medium, diced into pieces (brown it in a frying pan until tender)|
|Tomato sauce||2 Cup (32 tbs)|
|Onions||2 Medium, chopped|
|Rice||2 Cup (32 tbs)|
|Chicken broth||3 Cup (48 tbs)|
|Green pepper||1 Large|
|Mushrooms||1 Can (10 oz) (small can)|
Step1. Heat a large skillet on medium flame and put some oil in it.
Step2. Sauté onion and green pepper for 3 – 4 minutes
Step3. Add tomato sauce and chicken broth, bring to boil.
Step4. Add rice and lower to simmer. Cook for 15 minutes. Don’t stir in between. But once the rice is cooked, you can stir to avoid burning.
Step5. Add browned chicken and mushroom and cook for 2-4 minute.
Good Spanish Pollo Con Arroz has a crusty layer on the bottom of the pan. So if you find the preparation dry, you can add more sauce to it.
