|Blue cheese||1⁄3 Pound, softened and the rind discarded|
|Watercress sprigs||2 Cup (32 tbs)|
|Beef roast||1 Pound, thinly sliced|
|Mayonnaise||1⁄4 Cup (4 tbs)|
|Horseraddish||1 Tablespoon, drained (or to taste)|
|Salt and pepper||To Taste|
1. Open the bread lengths and spread the cut sides with the blue cheese.
2. Top the cheese with watercress and beef slices.
