In an 8- by 12-inch oval baking pan (or other 2-quart shallow baking pan), melt butter over medium heat.
Add potatoes and onions; mix to coat with butter, then season to taste with salt and pepper.
Spread vegetables evenly in pan.
Cook over medium heat until vegetables begin to brown at pan edge, about 5 minutes.
Then bake in a 450° oven until vegetables are well browned and potatoes are tender when pierced, about 45 minutes.
