Chicken Cooked With Grapes
|Bone in chicken breast halves||3⁄4 Pound, skinned and cut crosswise in half|
|Ground pepper||1 Pinch|
|Canola oil||1 Tablespoon|
|Reduced sodium chicken broth||1 Cup (16 tbs)|
|Red seedless grapes on the stem||1⁄2 Pound, cut in 4|
|Chopped flat leaf parsley||1⁄4 Cup (4 tbs)|
1 Sprinkle the chicken with the salt and pepper. Heat the oil in a large nonstick skillet over medium heat. Add the chicken and cook until browned, 5-6 minutes on each side. Add the broth and bring to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through, about 10 minutes. Add the grapes and simmer, covered, until the grapes are softened, about 2 minutes.
2 Using a slotted spatula, transfer the chicken to a plate. Add the grapes and sprinkle with the parsley.
