Easy Dundee Cake
|Mixed peel||2 Ounce|
|Plain flour||10 Ounce|
|Baking powder||1 Teaspoon|
|Mixed spice||1⁄2 Teaspoon|
|Castor sugar||6 Ounce|
|Softened butter||6 Ounce|
|Blanched almonds||1 Ounce|
Chop peel and raisins, sift dry ingredients.
Place softened butter in a large bowl, add all remaining ingredients with the exception of the almonds; beat together until smooth and thoroughly mixed
Place in an 8 in. round deep cake tin that has been lined with 2 layers of greaseproof paper.
Decorate top with almonds and, if desired, glace cherries.
Bake in a moderately slow oven, Mark 3, 325°F., 2 to 21/2 hours.
When cake is cooked, cover with a clean tea-towel and leave to cool in tin.
