Portuguese Caldo Verde
|Italian sausage||4 Ounce (In Casing)|
|Potatoes||3 Medium, peeled and sliced|
|Spinach/1 package, 10 ounce frozen chopped spinach||1⁄2 Pound, chopped|
|Garlic||1 Clove (5 gm), minced|
Slice Italian sausage 1/4 inch thick.
In large saucepan cook sausage till browned.
Drain off excess fat.
Add sliced potatoes, spinach, garlic, 3 cups water, 1 teaspoon salt, and 1/4 teaspoon pepper.
Bring to boiling; cover and simmer till potatoes are tender, about 20 minutes.
