Simple neat and clean cooking and a creative presentation can turn a normal dish into a gourmet. This is exactly what has been done with this bacalhau a braz recipe. There is no technicality in preparing this dish, but cutting the ingredients neatly, cooking them perfectly and putting them together on a plate in a nice manner makes it look scintillating.

Bacalhau dishes are common in Portugal and to a lesser extent in its former colonies like Angola, Macau and Brazil, and also in Norway and Newfoundland. I often combine it with potatoes for a tapas dish. People either love it or hate it I love it. It use to be a "cheap fish but no longer. The secret to making it palatable is in the soaking in eater steps. Shanti/Mary-Anne

It is amazing how different Portuguese recipes and cuisine is compared to the other european countries. Unlike the neighboring countries, Portuguese eat a lot of seafood - Bacalhau (salted cod), Caldeira (fish stew), crabs, lobster, sea bass etc. One of my favorite Portuguese recipes would be Cozido a portuguesa - a traditional rich meat stew served with a lot of vegetables.

Portuguese recipes are great; sometimes atypical and very non traditional - definitely not for the faint hearted.

I made a Portugese soup a couple of weeks ago using a mixture of beans, lentils, ham shanks and chorizo (Portugese not Mexican). WOW! Portugese food is excellent. I cook Plantanos Seafood dishes aand that is such fun and tasty. Guess I better get busy and take some photos and post some recipes, but I sort of feel no one uses them so.............. "No one uses them" = no one likes Portuguese recipes?

No, what I am saying is that it takes a lot of time for me to type up my recipes, take the photos and I doubt anyone uses the recipes I post here. I haven't edited added music etc. to the videos we took in Cambodia and Thailand as again not sure it's worth the effort as I doubt there is much interest in that area. Shanti/Mary-Anne

Thanks for posting this Portuguese recipe for codfish. Interesting use of prawns and parsley with codfish. Portuguese food is rather popular in Western part of India specially near the Goa area which was a Portuguese colony for a long time. Here is a link to some other great Portuguese recipes .

Favorite Portuguese recipe: Pork with clams. Supposedly came about because fish was so cheap that all the pigs ate it, and their meat tasted fishy, so the Portuguese started cooking it with seafood. Because particularly popular, according to legend, after the Mourano Jews were expelled from the country or forced to convert. "What do you mean you don't want to eat this pork chop covered in shellfish?"
