Guernsey Bean Jar

Ingredients
  Dried beans 1 Pound, soaked overnight (450 Gram, Small Size)
  Pig's trotter/Piece of shin beef 1
  Onion 1
  Chopped parsley 1 Tablespoon
  Salt To Taste
  Slightly thickened stock 1 Pint (1 Pint)
Directions

Drain the beans and put into a saucepan with fresh cold water.
Bring to the boil and simmer until tender.
Drain again and tip into a stone jar or earthenware dish.
Add the remaining ingredients and cover tightly.
Bake in a preheated cool oven (140°C/275°F, Gas Mark 1) for 4 to 5 hours.
