Apple Rum Meringue Pudding

Ingredients
  Apple sauce 2 Cup (32 tbs), canned
  Light brown sugar 1 Cup (16 tbs)
  Pecans 1 Cup (16 tbs), broken
  Raisins 1 Cup (16 tbs)
  Rum 1⁄4 Cup (4 tbs)
  Cinnamon 2 Teaspoon
  Nutmeg 1 Teaspoon
  Allspice 1⁄2 Teaspoon
  Egg whites 4
  Lemon extract 1 Teaspoon
  Sugar 1⁄2 Cup (8 tbs)
Directions

Mix apple sauce, brown sugar, pecans, raisins, rum and spices and heat.
Pour into a 1 1/2 -quart casserole.
Beat egg whites stiff and fold in lemon extract.
Gradually beat in 1/2 cup sugar until mixture stands in stiff peaks.
Spread over top of apple-sauce mixture in casserole.
Bake in a 325° F oven for 15 to 20 minutes or until meringue is delicately browned.
