Apricot Meringue Cookies
|Powdered sugar/1 1/2 cups powdered sugar + 6 packets sweet 'n low||2 Cup (32 tbs)|
|Flour||1⁄2 Cup (8 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Egg whites||4 , beaten|
|Chopped dried apricots||1 Cup (16 tbs) (Other Dried Fruit Can Be Substituted)|
Measure all the dried ingredients into a large mixing bowl.
Beat the egg whites and fold into dry mixture.
Add the chopped apricots.
Drop by teaspoonfuls onto baking sheet sprayed with Pam Spray.
Bake 15-18 minutes at 325° F.
