Scandinavian Beef Balls

Ingredients
  Ground beef 1 1⁄2 Pound
  Mashed peeled cooked potatoes 2 Cup (32 tbs)
  Onion 1 Small, grated
  Chopped peeled cooked beets 1⁄4 Cup (4 tbs)
  Chopped dill pickle 2 Tablespoon
  Eggs 2
  Light cream/Table cream 1⁄2 Cup (8 tbs)
  Salt 2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Butter/Margarine 4 Tablespoon
  Flour 3 Tablespoon
  Water 1 1⁄2 Cup (24 tbs)
Directions

1. Mix ground beef lightly with mashed potatoes, onion, beets, dill pickle, eggs, cream, 1 tea spoon of salt and pepper until well-blended; shape into 36 balls, then flatten each slightly.
2. Brown, a few at a time, in butter or margarine in a large frying pan, adding butter or margarine as needed. Remove with a slotted spoon and set aside.
3. Blend flour and remaining 1 teaspoon salt into drippings in pan; stir in water. Cook, stirring constantly, until the gravy thickens and boils 1 minute.
4. Place meat balls in gravy; heat just until bubbly.
