Crunchy Gooseberry Whip

Ingredients
  Gooseberries 1 Pound (500 Gram)
  Liquid honey 3 Tablespoon
  Whipping cream 1 Cup (16 tbs), whipped
  Butter/Margarine 3 Tablespoon
  Whole wheat breadcrumbs 2⁄3 Cup (10.67 tbs)
  Hazelnuts 1⁄4 Cup (4 tbs), chopped and toasted
  Brown sugar 2 Tablespoon
Directions

1. Place the gooseberries in a pan with 1 tablespoon water, cover and cook gently for 15 minutes, until soft.
2. Cool slightly, then puree in a blender or food processor; sieve to remove the tops and tails. Add the honey and leave to cool, then stir in the whipped cream.
3. Melt the butter or margarine in a frying pan, add the breadcrumbs and fry until golden brown. Leave to cool, then stir in the hazelnuts and sugar.
4. Divide half of the gooseberry whip between 4 glasses and cover with half of the crumbs.
