Fresh Rhubarb Betty
|Sugar||1 1⁄2 Cup (24 tbs)|
|All purpose flour||1 Tablespoon|
|Rhubarb||1 1⁄2 Pound, cut into 1/2-inch pieces|
|Soft bread crumbs||4 Cup (64 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs), melted|
|Flaked coconut||1⁄2 Cup (8 tbs)|
Finely shred 1 teaspoon orange peel.
Peel, section, and dice oranges (about 2/3 cup); set aside.
In large bowl combine sugar, flour, salt, and 1/2 teaspoon of the shredded orange peel.
Stir in rhubarb and diced oranges.
Add 2 cups of the bread crumbs and 1/2 cup of the melted butter; toss lightly.
Turn into 12x7 1/2 x 2-inch baking dish.
Combine remaining bread crumbs, remaining 1/2 cup melted butter, remaining orange peel, and the coconut.
Sprinkle over the rhubarb mixture.
Bake in 350° oven about 40 minutes or till golden.
