Scandinavian Potato Casserole

Ingredients
  Potatoes 6 Medium (pared)
  Half and half 3⁄4 Cup (12 tbs)
  Parmesan cheese 1⁄2 Cup (8 tbs), grated
  Salt 1 Teaspoon
  Nutmeg 1⁄4 Teaspoon, ground
  Pepper 1 Dash
  Eggs 3 , separated
Directions

Heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling.
Add potatoes.
Heat to boiling; reduce heat.
Cover and cook until tender, whole 30 to 35 minutes, pieces 20 to 25 minutes; drain.
Mash potatoes until no lumps remain.
Beat in half-and-half in small amounts.
Stir in cheese, salt, nutmeg, pepper and egg yolks.
Beat egg whites until stiff; fold into potato mixture.
Pour into ungreased 1 1/2-quart souffle or baking dish.
Cook uncovered in 375° oven until golden brown, about 45 minutes.
