|Cream of tartar||1⁄4 Teaspoon|
|Almond extract||1 Teaspoon|
Preheat oven to 375°F.
Butter and flour 2 baking sheets.
In a large bowl, beat egg whites and cream of tartar until foamy.
Beat in honey and almond extract until egg whites form stiff peaks.
Drop by table-spoonfuls onto prepared baking sheets.
Place 1 baking sheet on middle shelf of oven, and turn oven off immediately.
Leave cookies in oven for 1 hour.
Remove to wire racks.
Preheat oven to 375°F again.
Bake remaining cookies in the same manner.
