|Cake flour||1 Cup (16 tbs), sifted|
|Eggs||5 , separated|
|Lemon, rind||1 Teaspoon, grated|
|Lemon juice||1 1⁄2 Tablespoon|
|Sugar||1 Cup (16 tbs)|
Sift flour and salt together 4 times.
Beat egg yolks, lemon rind and juice until thick.
Beat egg whites until stiff, but not dry, and fold in sugar in small amounts.
Fold in egg yolk mixture.
Sift about 1/4 CUP of flour at a time over the surface, and fold in.
Bake in ungreased tube pan at 350° for 1 hour.
